Le film suit, en guise de fil directeur, l'itinéraire personnel du Dr. Colin Campbell, biochimiste nutritionnel à l'Université Cornell, et du Dr. Caldwell Esselstyn, ancien chirurgien de renom à la célèbre Cleveland Clinic.
